Hojicha Amber Roast

Though North Thailand as a tea cultivation region initially became popular for its Oolong teas, growers in 2011 for the first time produced red tea on the basis of the No.12 plant that already in its first year conquered the hearts of every tea lover, who had a chance trying this high-aromatic Northern Thai tea novelty. The carefully handpicked, processed according to old tradition, as the black tea is called by its ethnic Chinese producers in North Thailand, shows a clear rust-brown color in the cup, and the freshly infused tea's fragrance courts our olfactory senses with cocoa, nutty and bloomy notes and already anticipates the mild and still substantial aromatic taste of this tea, which is often compared to a dark roast Ti Guan Yin. We recommend an infusion period of well 3 minutes in order to fully assert the wide-facetted aromatic richness of this otherwise very mild tea, which suits very well for enjoyment in the evening, too.

Red Pearls Tea

Traditional medium fermented Liu Bao tea. Much like ripe pu-erh tea, liu bao is wet piled for several weeks to allow fermentation to take place. The degree of fermentation depends on the amount of time the tea is wet piled and can differ depending on the intended outcome. The one is wet piled for about 29 days, which is typical for classical Liu Bao.  The result is a liu bao with some bitter, sweet, chocolate and betel nut flavors.  It's got an old taste due to classic style processing and 5 years in hot and humid Wuzhou storage condition.

Our Bi Luo Chun was grown in the town of Mojiang in China. Rice Oolong

Description

This Northern Thai specialty, produced as an oolong tea made from a tea variety that has been local to the area for centuries, is flavored with a special wild-growing herb, “Nuo Mi Xiang Nen Ye” (sweet fragrance rice tender leaves). This herb gives the tea its distinctive, natural rice aroma, making it a true expression of its terroir and heritage.
Unique to this region, Rice Oolong should not be confused with genmaicha, as it shares neither ingredients nor flavor profile. “Classic” refers to the long-standing tradition of tea artisans in Northern Thailand producing this oolong in its authentic, original form.
During the traditional scenting process, done gently under heat without the use of any artificial aroma agents, the essence of Nuo Mi Xiang Nen Ye is absorbed by the tea. In the final rolling stage, the herb’s leaves are invisibly rolled into the tea, creating a seamless and lasting fragrance.
The result is a multi-faceted aromatic blend of fresh oolong tea and tangy rice notes, both maintaining their integrity through multiple infusions. The liquor, a clear golden-yellow to amber hue, carries a scent that perfectly mirrors the taste: balanced, warm, and evocative of the lush mountain air of Northern Thailand and Burma’s Shan areas.

Processing / Type

Moderately oxidized oolong (approx. 30–40%), naturally scented with “Nuo Mi Xiang Nen Ye” under gentle heat. The leaves of the herb are rolled into the tea during final processing—no artificial flavorings are ever used.

These little wafers are pressed from Shou Mei White Tea from Fuding in Fujian. Each wafer is roughly .15 ounce give or take 0.05 ounces and is just perfect for a 1 or 2 person tea session. This is for one ounce.

Tencha tea leaves blended and refined by Nishide-san are then ground into fine matcha powder at his partner's matcha stone mill factory. Leaves themselves are shaded under modern canopy shading for some 40 days (varies from year to year) for extra rich savory umami flavor.

Matcha Green Tea - Uji Heritage Grade

Bancha Goishicha is an extremely rare tea from Japan. This tea is very rare in Japan itself with only one farmer growing the tea until islands of Inland Sea of Japan local governments decided to encourage the production of this tea.  It is an aged bancha. The tea tastes a bit sour and helps aid in digestion. This is .5 oz.

Organic Bancha Goishicha

This lovely tea is grown in Mengku County of Lincang.  It's a local varietal, a hybrid of pure Assamica and Ye Bai Hao. The tea is fried by and in a wok, rolled, wilted very very briefly and then dried by hand in a wok again.  At this final stage the tea is pressed flat again to make is straight and pointy.  The finished product is a silver and green needled tea that locals call "Song Zhen" (Pine Needles).

In addition to its beautiful appearance, the tea brews up a lovely bright green-yellow with hints of raw chestnut and umami.  The tea is thick and lubricating to the mouth and throat.  A fine Yunnan green tea that is complex, delicate and satisfying.
